Roasted Carrots with Orange, Ginger and Mint

Roasted carrots are taken up a notch with the addition of orange juice, ginger, and fresh mint.  This side dish is easy enough for a weekday meal, yet elegant enough for the holiday table.

Ingredients

1 tablespoon olive oil
Zest and juice of 1 orange
2 teaspoons grated fresh ginger
1 teaspoon honey
1/4 teaspoon coarse kosher salt
1 1/4 pounds carrots, peeled and cut into 1 1/2-inch diagonal pieces
2 tablespoons coarsely chopped fresh mint

Instructions

Preheat the oven to 400F. Line a sheet pan with a silicone
baking mat or parchment paper.

In a small bowl, mix together the oil, orange zest, 2 tablespoons orange juice, ginger, honey, and salt.

Place the carrots on the prepared sheet pan, pour the dressing over the carrots and toss until coated. Spread the carrots out as much as possible on the sheet pan. Roast for 20 minutes, stir, spread out the carrots again, and roast for another 10 minutes, or until the carrots are tender and browned around the edges.

Toss the carrots with the remaining 1 tablespoon of orange juice. Transfer the carrots to a serving plate and toss with the mint. Serve warm or at room temperature.
