Pumpkin Pie Yogurt Parfait
Pumpkin pie in a glass with creamy yogurt, crunchy walnuts and spicy ginger makes for a decadent tasting treat!

- 1 cup candied maple-cinnamon walnuts [(recipe here), very coarsely chopped. Alternatively, you can use plain toasted walnuts
- 1 cup canned 100% plain pumpkin puree
- 1/4 tsp ground ginger
- 1/4 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1/8 tsp ground cloves
- 1/2 tsp molasses
- 1 TBSP pure maple syrup
- 1/4 tsp pure vanilla extract
- 1 TBSP milk (whatever kind you have on hand)
- 2–1/4 cups 2 % plain greek-style yogurt
- 2 TBSP crystallized ginger, finely chopped
Instructions
- In a medium size mixing bowl, combine the pumpkin, spices, molasses, maple syrup, vanilla and milk until mixture is smooth and uniform.
- In a pretty glass, layer ingredients in the following order:
- 2 TBSP yogurt
- 1 TBSP walnuts
- 1/2 tsp crystallized ginger
- 2 TBSP pumpkin mixture
- 2 TBSP yogurt
- 1 TBSP walnuts
- 1/2 tsp crystallized ginger
- 2 TBSP pumpkin mixture
- 2 TBSP yogurt
- 1 TBSP walnuts
