The best part of Thanksgiving for me was always waking up early to help my mom make pumpkin pies. It was the first order of business for the day and always resulted in a taste test of our handiwork at lunchtime.  Well, OK.  Maybe that taste test of pie ended up being my whole lunch…along with some stuffing! 🙂

The pumpkin pie I grew up with had two of my favorite ingredients: rum and ginger!  While this parfait doesn’t contain rum, it does contain sweet n’ spicy crystallized ginger, candied maple-cinnamon walnuts and luxuriously creamy greek-style yogurt.

This parfait will definitely satisfy your sweet tooth while giving you protein, calcium, and probiotics from the yogurt, omega-3 fatty acids from the walnuts, lots of Vitamin A for healthy eye sight, and free radical fighting carotenoids that may be protective against cancer as well as keep our skin looking beautiful. I’m all for anything that will keep my skin looking more youthful while making my belly and tastebuds satisfied!

Pumpkin Pie in a Glass

Pumpkin pie in a glass with creamy yogurt, crunchy walnuts and spicy ginger makes for a decadent tasting treat!

Ingredients

Scale
  • 1 cup candied maple-cinnamon walnuts [(recipe here), very coarsely chopped. Alternatively, you can use plain toasted walnuts
  • 1 cup canned 100% plain pumpkin puree
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 1/2 tsp molasses
  • 1 TBSP pure maple syrup
  • 1/4 tsp pure vanilla extract
  • 1 TBSP milk (whatever kind you have on hand)
  • 21/4 cups 2 % plain greek-style yogurt
  • 2 TBSP crystallized ginger, finely chopped

Instructions

  1. In a medium size mixing bowl, combine the pumpkin, spices, molasses, maple syrup, vanilla and milk until mixture is smooth and uniform.
  2. In a pretty glass, layer ingredients in the following order:
  3. 2 TBSP yogurt
  4. 1 TBSP walnuts
  5. 1/2 tsp crystallized ginger
  6. 2 TBSP pumpkin mixture
  7. 2 TBSP yogurt
  8. 1 TBSP walnuts
  9. 1/2 tsp crystallized ginger
  10. 2 TBSP pumpkin mixture
  11. 2 TBSP yogurt
  12. 1 TBSP walnuts
